Strawberry Matcha Bubble Tea: The Viral Drink
Dimitra Bika | October 14, 2026
If you've spent any time on TikTok or Instagram this year, you've seen it: layers of soft pink and vivid green, a swirl of milk, and a pool of glossy brown sugar tapioca pearls sitting at the bottom of the glass. Strawberry Matcha Bubble Tea has become a café favorite, and it's easy to see why. It looks like a sunset in a cup, and it tastes even better.
At The Inspire Food Company, we supply the ingredients behind homemade and café-made bubble tea across Europe. So when a trend like this comes along, we don't just want to show you how to make it. We want to show you how to make it properly.
Quick Recap
- Makes: 1 large glass (500 ml)
- Difficulty: easy
- Time: about 10 minutes, plus cooking the pearls according to the package instructions
- You need: tapioca pearls, brown sugar syrup, strawberry tea, juice or our strawberry syrup, matcha powder, milk and ice
- Our ingredients: Tapioca Pearls and Brown Sugar Syrup
Why Strawberry Matcha Bubble Tea Is So Popular
The appeal isn't just visual. This drink works because it balances three things people are craving in 2026:
- A lighter, fruit-forward flavor instead of an overly sweet, heavy milk tea
- A dramatic, layered presentation that's practically made for sharing online
- A topping that actually delivers texture: soft, chewy tapioca pearls soaked in brown sugar syrup, so every bite is full of flavor
It's a drink built for the moment: light enough for summer, cozy enough for early autumn, and striking enough to make people stop scrolling.
The Recipe: Strawberry Matcha Bubble Tea with Brown Sugar Tapioca Pearls
This recipe uses two of our ingredients: our Tapioca Pearls and our Brown Sugar Syrup. A quick note on the matcha layer: matcha powder isn't currently part of our range, so for that component we recommend picking up a good quality culinary-grade matcha from your usual supplier. Everything else in this recipe is available from us.
Ingredients (makes 1 large 500 ml cup)
For the brown sugar tapioca pearls:
- 1 handful Inspire Food Tapioca Pearls (cooked according to package instructions)
- 30 ml Inspire Food Brown Sugar Syrup (our standard recommended ratio per 500 ml cup)
For the strawberry layer:
- 100–150 ml chilled strawberry tea, juice, or your preferred strawberry syrup mixed with water
- Ice cubes
For the matcha layer:
- 1–1.5 tsp culinary-grade matcha powder (not currently part of our range, see note above)
- 40 ml hot water (about 70–80 °C, not boiling)
- 100–150 ml milk or plant-based milk
- Ice cubes
Method
- Cook the pearls. Prepare the tapioca pearls according to the package instructions, then drain and immediately toss them in the Brown Sugar Syrup while still warm. 30 ml per 500 ml cup is our recommended ratio, so the pearls soak up flavor and turn glossy and dark.
- Build the base. Spoon the brown sugar tapioca pearls into the bottom of your glass. If you like the caramelized-drip look, swirl a little extra syrup up the inside of the glass before adding ice.
- Add the strawberry layer. Fill the glass halfway with ice, then slowly pour in the chilled strawberry tea or syrup mixture.
- Make the matcha. Whisk the matcha powder into the hot water until smooth and frothy, then let it cool for a minute.
- Add the matcha layer. Stir the matcha into the milk, then gently pour it over the ice on top of the strawberry layer. Pouring slowly over ice is what creates that clean, Instagram-worthy separation between the two colors.
- Serve with a wide bubble tea straw so you can pull the pearls up from the bottom, and stir just before drinking to blend the layers to your taste.
Why the Ingredients You Use Actually Matter
Here's something most "viral drink" recipes skip over: not all tapioca pearls and syrups are made the same way, and for a drink you're making at home, or selling in your café, that difference matters.
The Inspire Food Company supplies bubble tea ingredients across Europe. Our Brown Sugar Syrup is certified to FSSC 22000, a GFSI-recognized food safety scheme, a benchmark major retailers use when approving their suppliers.
We supply cafés, retailers, and home bubble tea makers across the EU.
Make It Your Own
A few easy variations if you want to put your own spin on this drink:
- Swap strawberry for mango or lychee using our mango or lychee fruit syrup for a different color contrast with the matcha layer
- Use our popping fruit pearls instead of (or alongside) tapioca, such as strawberry fruit pearls, for a fruitier, juice-burst topping rather than a chewy one. They need no cooking, so add them straight from the cup and let the matcha cool first
- Make it a mocktail by adding a splash of sparkling water instead of milk to the matcha layer for a lighter, fizzier finish

Frequently Asked Questions
What is Strawberry Matcha Bubble Tea? Strawberry Matcha Bubble Tea is a layered bubble tea drink combining a fruity strawberry base, a smooth matcha and milk layer, and chewy brown sugar tapioca pearls at the bottom of the glass. It's known for its striking pink-and-green color contrast and balanced sweet, fruity, and earthy flavor.
Can I use fruit pearls instead of tapioca pearls? Yes. Tapioca pearls give a soft, chewy texture, while popping fruit pearls burst with real fruit juice. Both work well in this recipe. Try tapioca for a classic feel, or fruit pearls for a fresher, juicier finish.
How do I keep the layers separate? Use plenty of ice, and pour the milk and then the matcha slowly over it. The ice slows the liquid down, so the layers settle instead of mixing.
What kind of matcha should I use? Culinary-grade matcha works well in a layered drink with milk and fruit. Ceremonial-grade matcha is smoother if you prefer a milder taste. Whisk it with hot water (about 70–80 °C, not boiling) so it dissolves without lumps.
How many tapioca pearls do I need per drink? About one serving, roughly a handful. Check the package for the portion size and the cooking instructions.
Is the Brown Sugar Syrup suitable for vegan diets? Pair it with a plant-based milk in the matcha layer if you want to avoid dairy. The syrup may contain traces of nuts, milk and milk products, so check the ingredient list and allergen information on the product page if you follow a strict vegan diet or have allergies.
Why does certification matter for bubble tea ingredients? Bubble tea ingredients, tapioca pearls, syrups, and powders, are food products. Our Brown Sugar Syrup is certified to FSSC 22000, a GFSI-recognized food safety scheme, confirming it has been independently audited for food safety. It's a benchmark major retailers use when approving their suppliers.
