Make Refreshing Lemon Iced Tea with Tapioca Pearls

Summer with a chilled glass of sweet lemon iced tea… oh yeah!  

The supermarket options for drinks are numerous, but unfortunately also often full of ingredients that you can barely pronounce...

This fresh, homemade version is so easy to make and really delicious. The tapioca pearls give this drink a particularly unique flavor!

Ingredients:

  • 950ml water
  • 70ml lemon syrup
  • 10 bags of black tea
  • Juice of 6 lemons
  • 4 sliced lemons
  • Pinch of baking soda

Preparation of the tea:

Bring 4 cups of water to the boil.

In a large heatproof jug, mix the boiling water with the baking soda and syrup. Add the tea bags and leave to infuse for 10 minutes (the longer, the stronger the flavor). A pinch of baking soda reduces the bitterness and makes the tea "smoother".

Remove the tea bags.

Add the lemon juice and fill up the rest of the jug with cold water.

Chill until it has cooled down.

Preparation of the tapioca pearls

  • 100 grams tapioca
  • 600 milliliters of water

Ingredients Honey/sugar mixture:

  • 2 tablespoons (brown) sugar
  • 1 tablespoon of honey
  • 150 milliliters of boiled water

 Bring 600 ml of water to the boil and add 100 grams of tapioca

 Boil for 30 minutes and then leave to cool (important!). Rinse with cold water.

 Add the honey and sugar mixture.

 Add lemon slices and ice to the glasses and pour the tea over the ice cubes and lemon slices to serve. Add the boiled tapioca pearls.

Flavor tips and variations:

Tea blends:  Pure black tea bags are used for this recipe, but you can use any blend you like. For example, fruit-flavored black tea is also great for iced tea.

Green tea: If you want to use green tea, the hot brewing method is particularly important, as it can become bitter if you leave it to infuse cold.
