Melon Mint Tapioca Iced Tea: New Summer Highlight

Summer has officially peaked, and so has bubble tea season. If there's one drink that captures everything we love about July & August, it's this one: cold, fruity, a little chewy from the tapioca pearls, and finished with a hit of fresh mint. Meet our new favorite: Melon Mint Tapioca Iced Tea.

Why This Recipe, Why Now

Melon is the taste of summer for a reason: it's hydrating, naturally sweet, and endlessly refreshing. Pair it with our classic tapioca pearls, soft, chewy, and satisfying in every sip, plus a sprig of mint, and you've got a drink that feels like a mini vacation in a cup!

🧋 The Recipe

Ingredients (makes about 4–5 glasses)

  • 950 ml water
  • 70 ml melon syrup
  • 10 bags of black tea
  • A handful of fresh mint leaves
  • Pinch of baking soda
  • Ice cubes
  • Lime wedges, for garnish

Preparation of the Tea

Bring 4 cups of water to a boil.

In a large, heat-resistant pot, mix the boiling water with the baking soda and melon syrup. Add the tea bags and let steep for 10 minutes (the longer, the stronger the taste). A pinch of baking soda reduces the bitterness and makes the tea "softer."

Remove the tea bags.

Muddle the mint leaves gently and add them to the pot, then fill the rest of the jug with cold water.

Refrigerate until cooled.

Preparation of the Tapioca Pearls

  • 100 grams of tapioca
  • 600 milliliters of water

Honey/Sugar Mixture

  • 2 tablespoons (brown) sugar
  • 1 tablespoon honey
  • 150 milliliters of boiled water

Bring the water to a boil, add the tapioca pearls, and cook according to the package instructions until soft and chewy. Drain.

Mix the sugar, honey, and boiled water together, then soak the cooked pearls in this mixture for a few minutes so they stay glossy and sweet.

To serve, spoon the tapioca pearls into a glass, fill with ice, and pour the chilled melon-mint tea on top. Garnish with a lime wedge and a fresh mint sprig. Serve with a wide bubble tea straw so you can enjoy the tapioca pearls with every sip.

For an extra refreshing twist, freeze small melon cubes ahead of time and use them instead of regular ice, they keep your drink cold without watering it down.
